I love seasonal food and rhubarb is one of my favourite flavours.
I make fools with all sorts of soft fruits. I’m not sure if this is a true fool but it’s very yummy.
Ingredients
225g/8oz trimmed rhubarb
300ml double cream
generous squirt of fruit sugar syrup
3 tablespoons of greek yogurt
Method
Cut up the rhubarb into small chunks and cook in a small amount of water. When it has become very soft add the fruit syrup and cook for a little longer, making sure there are no lumps.Whisk the double cream until it is very stiff, add the greek yogurt and finally the rhubarb.
I’ve also made some crumble muffins (using a recipe from a magazine).
And this sunday I made a brioche and rhubarb pudding.
I’m also planning on making some rhubarb cordial and also some jam, I just can’t get enough of rhubarb!
